Pepper Jack for me, as far as popular cheeses go... I've also had Habanero cheese, which I probably like even more (I like anything spicy lol).
I like most cheese, though; gouda, havarti, and Cheddar cheese are up there as well. I like Swiss and provolone most on sandwiches.
