Because I think their pairing would have made more sense. It would have shown love can overcome centuries of blood hate red.

Well, there is proof he did have feelings for Hermione in the books. Take the goblet of fire for instance. He warns Harry, Ron and Hermione about the death eaters attack at the quidditch world cup when he could have easily kept his big mouth shut. He specifically warned them to keep her safe
