I was playing a tournament online and got a pretty nice knight checkmate.
I have seen many nice knight underpromotions as well...

It's true that knights are cool in many positions because of their unique ability to jump.
I can't believe you didn't include one of these checkmates. Even though they are cliched, this has to be the best example of a knight's beautiful jumping ability:

Knight’s are my favourite chess piece . They are so good laying an ambush ! …..for my money, they are next to the Queen, the most dangerous piece on the board .
