The history of sanitary water is actually quite interesting. I know that in Britain alcoholic drinks were usually drank by peasants instead of the dirty water however in countries such as Italy where Christianity brought a new emphasis on hygiene water fountains from underground sources and aqueducts were formed, this likely allowed access to clean water. Ancient Egypt was one of the first places where water cleaning and some level of sanitation beyond wells occured.
It’s not like they never drank water. And the abv% was probably much lower than todays alcoholic drinks.
I am pretty sure that in the past Beer was produced for this reason, after all, what better to drink than a clean alcoholic drink made with the abundant crop grown throughout the country?
