Another cheese tip: Get it out the fridge some time before using it. It tastes much better at room temperature !
I drive the deli folks crazy when I get Lorane Swiss cheese. I want it so thin that it is basically all holes. Being that thin it absolutely has to be room temperature to separate the slices. But the flavor is worth it.

I was grating some Wensleydale this morning for sandwiches and had the revelation that because of its crumbly nature I was better just cutting up into smaller pieces with a knife...You're never too old if you are still learning !
