Oh ok! I thought that's how thanos threw the moon in infinity war. That was the space stone wasn't it?
Well, the space stone (originally the tesseract) is actually used to travel great distances by making a portal or bending space. The way Thanos threw the moon was by projecting the powers of the Power Stone using the space stone. So he could essentially destroy things far away. You only have Soul and Power Stones, so that confines your powers, also, you can not exit the bounds NYC.

Also, what about your defense and maneuver.
Please note that the soul stone is able to contain, control or summon a beings soul, not their physical entity. Though, taking the soul away from a living being is hard, and only deals minute damage. But the soul stone can be used to summon deceased souls, possibly granting some resurrection?
