6 and 8 are different.
The widely accepted definition is-if you lose, you lose rating. If you win you win rating. When I won against someone rated 200+ my rating, I only got +6 rating.

That is not correct.
I am looking at those games now. First of all he has beaten you a few times. He gained 0 points because the rating difference is too great, you've lost 0 points as well.
After first loss he went from 2634 to 2618, so he lost 16 points. You went from 1168 to 1184, so you've gained 16 points. You have beaten him twice after that first win and both times you've gained 16 points and he lost 16 points.
So, as you can see, when the opponents are roughly equal and have played enough games, both will stand to gain or lose 8 points. As the gap gets bigger, points gained and lost will change until at certain point higher rated player will gain 0 for a win and can lose 16 in case of a loss. I am not sure if you can gain/lose more than 16 if you have played enough games, but probably not.

The only time you can get 200 here is when you've played just a few games and you practically have a provisional rating. When you've played enough games, your playing strength is evaluated accurately enough, so you do not gain that many points, no matter who do you beat.
But you still win more when you beat higher rated opponent, and lose less when you lose.

I'm guessing they adjust the K-factor based on how many games you've played.

The rating system isn't reward based or a trophy or something. Mathematically it has a very specific purpose, and that is to predict your future results based on your past results.
For example, if you beat a 2600 player in one game, then it would be irrational to predict you will always beat 2600 players (or to assume you're at least 2200 or 1800 or 1500 etc).
It's more intuitive if you think of it as taking the average of your last 100 games, and then whatever rating it gives you for that, if your last 10-20 games were even better, you'll end up a little higher, and if your last 10-20 were worse, then you'll end up a little lower.
The rating system works one game at a time, but looking at it from a game-to-game perspective doesn't give you a good feel for it.

If your RD is high, then yeah (meaning you play often).
Otherwise it could be 10 points for beating someone equal to you. It just depends.

Mods watch all of the games as they are played and decide on how many points a player will gain or lose. They're supposed to use a formula given to them by the admin. but some of them just go off the cuff.
so they can (the mods) give the person -100 when hes playing a CM? or something like that?
