Are you referring to games played OUTSIDE chess.com?
Or are you referring to tracking which countries you have played against INSIDE chess.com?

Some members are trying-to-play-someone-from-every-country (see also im-king-of-the-world). Bill Wall uses national flag icons on his homepage to track this.
The-interactive-map (premium member only feature?) is great for this.
