Isn't it, the knight in chess represents the rider of the horse(knight), not the animal(horse). Bishop represents the spiritual adviser to the king. Queen, the queen of the palace, and the rook which represents the palace(kingdom).
So, I believe when we play chess, we are reliving the past ages of two kingdoms at war, not just the simple idea of animals jumping to whatever squares they want.
Chess represents the regal past.
