There isn't an opening against this, except the thing is the knight on h6 is misplaced. Any opening will do, as long as you can capitalize on this innacuracy.
Best response for white after 1.e4 g6 2.d4 Nh6 3.e5 Bg7
If he goes especially with Nh6, you can actually just go Nc3 Bf4 Qd2 (or even delay the Nc3 move) to threaten as soon as possible his knight, which has to go back to g8.
If he tries to go for a Nf6 or e6-Ne7 setup, you might just want to play with h4-h5 most of the time after Nc3 (sometimes you can throw out e5 to threaten the knight and his pieces harmony, but that's really situational).

These statements contradict each other.
3.e5 is a bad positional mistake- it can only help Black making something out of that terribly placed knight at h6.
A lot of other moves suggest themelves (Nc3, Bf4, h4, and so on).
What's the point of e5?
Be3/Bf4, Qd2, with f3 at some point (to avoid Ng4), and black has issues...

My friend likes to play black and always opens with building a "fort" on king's side with 1. ... g6; 2. ... Nh6 and 3. ... Bg7.
If I take control over center, he builts a similar "fort" on queens side and then starts to built a strong pawn structure.
He is a strong player and whatever I do in the opening, mostly he takes over in middle game.
Please adivise the best opening against these "forts".
