100 points isnt much difference in skill at clublevel but its a huge skilldifference between for example Carlsen and Gelfand which is 100 points. The higher the rating the more they matter
Actually, the reality is far more complex and nuanced than that. Jeff Sonas actually researched this question a few years ago: Review of the FIDE rating system
Amongst other things he found that the expected scores used by FIDE to calculate Elo ratings are not achieved consistently. Players rated over 2200 tended to come quite close to predictions but lower rated players diverged significantly from the "expected" results. They scored better than predicted against players rated lower than themselves, but worse than predicted against players rated higher.
I love the evans gambit as white. If black plays correctly he can easily equalize, but if he is careless he soon has an army of white pieces aiming directly at his king. yes thats most attacking opening for white

What’s your objection? I think the point is simply that the Queen’s Gambit isn’t a “real” gambit because even if you take the pawn (immediately or later), you don't try to hold onto it.
If black plays properly in the Evans gambit he reaches equality early. But if you have Morphy+ level tactics... Go for it black will burn his clock looking for only moves
