5.Nxf7 is actually a bad move! Black replies with 5...Qh4 and has several annoying threats. 6.Qf3?? for example is losing on the spot after 6...Nd4
5.Nxe4 is also nothing after 5...d5
Simple chess dictates to play after the king, and this is the right approach: 5.Bxf7+ Ke7 6.d3 and White is much better (6.d4 is also strong).

nxe4 is not a bad move...
Certainly better than 5.Nxf7? but still nothing to boast about.
6.Nxe4 d5 6.Bd3 de4 6.bxe4 Bd6 resembles a well-known position where Black stands very well, but there the knight is on f3 instead of b1.
