There are so many things you have to learn to get good at Chess.
Taking on a complicated opening just seems counter to learning good chess.

If you are 600 and have fun playing an opening, even a highly theoretical one where you only know the first 5 moves, why not play it? Play it, study simple/basic tactics and analyze your games and you will improve. As long as you have fun you'll keep playing and keep improving. (Now if you are 600 and playing for money not love, you'll need to optimize your game. )
Beyond that, one good approach is to know where your pieces go in an opening's key position and have a general idea of how play goes from there. Then you work backward from there to, e.g., 1. d4 d5 . In a game starting 1. d4 d5 (for example) you develop your pieces aiming for the key position.
Dont worry about openings at 600! Have fun and learn!

To answer your 1st question:
”Why do people say Beginners shouldn’t play Heavy Theory Openings”.
I believe experienced players often tell beginners not to play such lines because they are trying to help beginners!
The game of Chess can be extremely complicated and can be extremely overwhelming.
People don’t mention it, but a lot of Beginner Chess players quit playing Chess.
The Pressure to get better can be a very difficult burden on the shoulders of a Beginner.
You combine that pressure with 1 of the most complicated openings in all of chess!
It's a recipe for disaster!

My philosophy is don’t you think Beginners deserve a break?
Why do people insist for Beginners to play the most complicated chess lines?
Doesn’t a Chess Beginner have the rest of their chess career to learn Heavy Complicated stuff?
What is the rush?
Can you think of Sports or Games were total Beginners are expected to be Masters at the start of their career?
Most Sports & Games try to make things easy, simple, & fun for Beginners.
It makes perfect sense!
This Is why I have always recommended Simple & Fun openings for beginners.
