I doubt anyone could study the entire Khanacademy . Too theoretical. Try the tal variation. Tal considered it the refutations of the caro kann

The book Keep It Simple 1 e4 uses the Two Knights against the Caro Kann, the Two Knights has been working out fairly well for me.

When I face the Caro-Kann, I get "Hungry Eyes"
"One look at you and I fantasize"
That said, it's a line you really need to know to play it. I wouldn't recommend going out on a limb and trying to play the Fantasy Variation (3.f3) blindly. It is a line you need to study for 6 months before trying to use it.
Other legit options are the Advance (3.e5) and the Classical (3.Nc3). If you exchange (3.exd5), I'd suggest the Panov as the basic exchange variation gets White nothing.
But there are 4 choice to actually try to get an advantage: 3.f3, 3.e5, 3.Nc3, or 3.exd5 and 4.c4.
There are books out there covering each of these.
