Queens cannot jump over knights (or other pieces). Are you playing some odd chess variant?
3...exf4 is bad because of 4.e5, while 4.Nf3?! (transposition to a king's gambit line) can be answered by 4...d5 which is probably somewhat better for Black.
In the game, you played 5.e5 after Nf3, which gives Black two good options- 5...Nh5 and 5...Ng4 (none of them would be possible with the knight at g1).

Without KF3
For that game, you would actually want to play Nf3 because your opponent moved their queenside knight, leaving open the option for Qh4+. Nf3 prevents that idea.
@Ricky_nl re #10 My gracious. It takes real courage and a sense of derring-do to play the Steinitz Gambit. Kudos. I risk it occasionally, but I'm old and don't give a pair of fetid dingo's kidneys about my grade. For me the joy is in the beauty of the dance, not in the game result.
You will meet stronger lines than the one you met in that game sooner or later. The critical test is generally considered to be the following. Be ready to meet it one day...
For #9, why didn't you play 12. Qh2 after 11... c5, your opponent obviously didn't notice the threat afterwards- so you could've ended the game much earlier.
For #10, you lost your tempo with 5. Bd2, just forget that pin because it's really not a threat.
