I don't think I've played a variant with only a standard chess set. The closest is probably Grasshopper chess. It's a normal set, but you add 16 grasshoppers. If you don't have grasshoppers, just use some candy, and then you can eat them when you capture them. 
What is your favorite chess variant using a standard chess set?
