I've played less than 1% of all the chess variants, but one seemingly little known one that is quite clever is "trapeze" chess. White has an extra 8 pawns on the board, but no queen. Black has the normal amount of pieces.
That is totally lost for the Pawns, right?

The extra pawns are bunched up in the middle, so White has some serious central control. White's position is a massive fortress, but then Black still has the queen.I'd say White is under more pressure to succeed though!
I'd play this one variant:
White only has pawns and king but moves twice.
