Is there a way in a speed chess game, say a five minute one, that when the time runs out to sort of stop the clock and continue the game with the opponent with the pieces in same position but with the clock turned off?

Not easily.
You can continue the game versus a computer opponent.
You could take the final position and create a custom daily chess challenge.
