There are tons of second hand openings that rately see grandmasters playing that I hope chess engines will eventually flesh out.

It might be 20 or more years still before that happens. I'm under the impression that opening book creators  will eventually start exploring those openings after the more popular ones have been so vetted out in engine to engine play that they will start making and playing opening books with less popular lines out of bordom and curiosity.

hello, i'm new to chess and to this site, i'm intrigued by the club things, is there one for beginners? i want to play real people but i also don't want to play someone far beyond my skill level. also any general advice (i know that's vague) on where to start as i'm trying to improve?

This will do. Chess.com is closing in on 30 million players, so there are always players near your level looking for games.

Why is nbc3 considered the best move? I'm not too good at looking several moves ahead so all I see is me suiciding my knight.

EDIT: Of course right after I post I see my other knight can take their bishop and threaten their queen.

After Nbc3, if his bishop takes, then Qxe3+, then Queen takes that bishop so you're one point ahead.

I've noticed that when I play chess, I worry more about my next move and more often then not, I don't even pay attention to my opponents next move. Is it more important to pay attention to yourself and your next move(s) or is it just as important to understand what my opponent is thinking? I really need a solid answer because i'm willing to shift my mentality towards playing chess (strategically and tactically) if I can just understand what my mentality should be when I enter a chess match.

I guess an example would be the position after 1 d4 Nf6 2 Nd2 e5 3 dxe5 Ng4 4 h3,

when Black perceives that 4...Ne3 can be played because of 5 fxe3 Qh4+ 6 g3 Qxg3#.

It is more important to be aware of your opponent's idea.

En Passant?

Only when an opponent moves their pawn two spaces to bypass one of your pawns.

Start with the King's Gambit. Have fun.  Benko or Latvian as Black.  Again, have fun.

Danish is also an option.

Danish is very good.  Better than it's reputation.  1300 is a good level to experiment with it.
