the hardest checkmate is King + Knight + Bishop vs. King, King + Rook vs. King is insanely easy its ridculous to say its even hard.  If you think its hard you simply haven't learned that mating sequence.

3 Rooks, 3 Knights, 3 Bishops + 2 pawns v 3 Queens and 8 pawns is quite hard, though materially equal.

No, it does never end in stalemate. In games and retrograde problems it ends straight away because the position is dead. In endgame studies it ends in a repetition draw. In other problem compositions it ends either by the 50M rule or by repetition.

It is all very confusing today. Read my post "understanding dead reckoning" to see that it could be resolved by the use of Soft DRexit. That would declare K vs K dead in all standard chess types!

Bishop Knight checkmate or middle game checkmate if you didnt Fried Liver or Traxler someone. They definitely didnt bongcloud.

It's not legal but if we have King+Knight vs. King and our opponent is a very bad player we can checkmate him.

Second easiest: Queen + Rook mate

Third easiest: Two rooks mate

Fourth easiest: queen mate

5th easiest: rook mate

6th easiest: Two bishops mate

7th easiest: bishop and knight mate

Hardest: queen vs rook

For some rook mate is easier than queen mate because there's less chance to screw up.
