Sorry, I'm unfamiliar with the term. Is it basically when you give up a major piece for a minor piece in order to simplify the situation on the board? (Which is what I feel like I did.)

Actually, simplification is an even exchange of pieces with the intent of clearing the board of pieces - this is usually done when winning, in order to reduce the possibility of your opponent's counterplay. Technically, you did make a sacrifice, but it was not a rook sacrifice; rather, you sacrificed the "exchange", i.e. a rook for a minor piece. However, since you had a clear material advantage, I suppose it might be called simplification in this case, since you end up with a winning advantage anyway.
Sorry if I am harsh... but you should not be happy about winning some lousy player. I feel you should be analysing the game and correcting the mistakes you made. If not for that one mistake your opponent made, you surely would have lost due to your tactical weaknesses. Go practice some tactics! It will do you good.
@skj, lousy player is undefined. By simply looking at our ratings, both of us are weak players. He was stronger than me, I beat him. Of course I made a lot of tactical mistakes, I'm a weak player. I would find it more constructive if you took your time to specifically critize my moves.
pfren, I did not see the rook-king fork with the queen until a friend of mine analyzed the game.
Your Bc3+ zwischenzug was excellent, but castling was a mistake as you could have won more material by Qc3+ winning the rook, and also playing 13...a6 after that, you could have played 20...d4 winning the bishop as it has nowhere to run, and after that 22...d4 could still win the bishop. You don't have to be afraid of any discovered attacks by the Rf1 if the Bishop moves back to Bc1 and you take the rook.

So this is a game I just played playing the Alekhine defence, including a rook sacrifice midgame. Pretty happy with it, seeing as I have been losing a lot lately. Feel free to throw in constructive comments :) (Note that the rook-sacrifice is the one where I got captured by the bishop. The knight-fork was simply a huge blunder.)
