In this position should what should my opponent have done to try for checkmate or a draw with me playing as black?

1. Q-c7+  Kxc6  2.B-b5+ picks up your Queen. You're lucky he blundered. In fact, after Q-c7+, no matter where you move, you drop the Queen on a1, as the Bishop comes out with check.

First I assume you meant 1. Qc7+ Kxf6 2. Bb5# and while that's true I could've diffused the situation by playing Kg8,Kf8, or Ke8, and if I did play Kf8 I could've diffused the threat of Bh6+ by playing h6.

Sorry, that would have been mate. But no, your further analysis is incorrect. After Q-c7+, you can't go to g8 because of the knight. And after K-f8, which is forced, B-h6 actually mates. Therefore, he had forced mate in two.

I take that back, After 1. B-d7 2. Qxd7  Kxf6 3.B-g5+, then you drop the queen.

Thats true, but instead of playing b4 I could have played f4 diffusing the immediate threat of Bg5 or Bh6. Then we could play 2. Qc7+ Kxf6 3. Bxf4 h5 diffusing the bishops threat. And I still have the potential for the original sequence if he leaves his queen and king along to win the queen.
