I think the stereotype is that Caro-Kann players are wusses who are scared of having an imbalance like doubled/hanging pawns and just want to play the same structures every game.
An interesting point, but is that being a wuss or being a pragmatist? It’s much easier to play familiar positions, and familiar pawn structures are a huge aspect of that. Every opening has its associated pawn-structures, and each one has its own range of deviation within a broader opening. Caro-kann may be on the narrower side, but there are still big big differences depending on whether white pushes the e pawn or not (most commonly) as well as all the other variations. The fantasy, obviously, can lead to some very unusual positions, too…
