I tend to say "good game" even for the games that were manifestly horrible on one or both sides. Why? Because no matter the blunders either of us made, it was still a good time spent, a good experience, and thus a good game. More like "it was good to have this game," rather than "this was a well-played game."

A hi, good luck is nice, if you get it.. or just good luck... but fine if you/don't say anything...
what I find rude, is if you say it to your opponent and they don't reply or return the friendly sentiment... just an acknowledgement of the greeting.
reminds me of people who go to purchase something.. checkout operator gives them their change and the purchaser doesn't even say thanks.

I sometimes say the same thing, when I see their rating is exponentially higher than mine... this reply usually comes 20 seconds after I freak out, shudder, deep breathe and go OMMMMM, I can get through this...

I do want to hide my ineptness for a few moves, I don't want to just give it away before the game begins

Not me. I need luck to win regardless of my opponents rating.
I need them to blunder, and sometimes more than once... which I guess is luck on my side... I've fluked a few good hard earned wins over some much higher rated players (400-500 pts higher than me)... but they are only a few and this is after being on the site for several eons... so relying more on luck than my chessability.
I don't mind chatting or an occasional bit of friendly banter during a game, I do it myself too and also think it's nice to say well played and thank them for the game afterwards. One of my opponents today did that to me in an email, after we played a rematch, which I think was really nice and I've now added him on here as a friend.
I even welcome a bit of teasing as long as it's friendly. One opponent this evening though used it to tell me he thought I was taking too long over my moves - and then disabled his chat window, almost before I saw his comment. Ironically the results bore out who was the better player as I played the best game I've ever played on here and checkmated him in 22 moves, with 11 minutes still left on my clock. ;)
