Because the 'rules change' according to what kind of chess you've selected to play.
Online versus live.
Rated versus unrated.
Tournament versus single game.
Clock chess versus chess with no clock.
Sudden death on the clock versus 'increment'.
USCF versus FIDE rules.
Bullet and blitz versus slower ...
And then there's all the chess variants too.
Touch move is ridiculous, it should be clock-move. These arguments of distracting/confusing your opponents or gaining a millisecond time advantage from using different hands to grab the pieces or whatever is ludicrous. Online you can drag the piece back and let go.
