It will depend if you can trade into a winning endgame (i.e. Rook, King & pawns) or not. Technically, the 2 knights (6 points, 3 per knight) are worth more than a single rook (5 points), but a lot of factors depend on the resulting pawn structures and rook and king positions. The main goal in a rook, king and pawn endgame is promoting a pawn or stopping your opponent from promoting one. If your opponent is closer to promoting than yourself, you probably don't want to trade just yet. But also is your opponent threatening to win something with the 2 knights?
Trading pieces in general is not useful unless you gain something in return (removing a threat, winning material, simlifying to a won endgame, etc.).
