Even Kasparov cannot beat an engine. Whats the point of even playing postal chess then?? if both sides are getting all their moves from a program.
Are endgame tablebases cheating?

Because just picking the 'best' moves isn't enough to get good results.

Just read in Chess life that tablebases are allowed in correspondence chess.
Engines too, both in ICCF and LSS. Here it's a different ruleset.
