Does anyone know how when you have inserted a table into Microsoft Word, how you can add more columns/rows to the table if you used up the table and need more space?

Would be very appreciated if somebody could tell me...

From the "Table" menu, select "Insert." This will give you various options, such as inserting new columns to the right or left of the table.

Right click on the table and a subemenu will appear.  Choose split cells and wait for the magic.

To insert row at the bottom, put cursor at the last cell and just press TAB.  This is usually done when you know the column number and don't know the row number.
