Elo fix proposal.

I am a 700 elo player, but I can consistently beat my 1000 to 1200 friends. You should have an elo reset once every two months or so, giving you some amount of placement games, so you get a new elo based on your accuracy as well as wins during your placement games.

If you're really stronger, it's not going to take too long to get your rating up

What I'm saying is that the elos are incorrect. When I just play online against another 700 to 800 player, they are of my skill level, but when I challenge a 1000 elo friend, I can beat them consistently.

This is what I experience sometimes. Whenever I play in the morning, it's easier to gain around 100 elo points. And I'd lose that 100 in the evening. In both cases I play against people of my elo.

You can't take your experience against one player to claim the ratings are incorrect. Some people have problems with individual players and a friend may not always play their normal level when casually playing games against someone they know and potentially play a lot.
