I might be ignorant, but what do all the flairs mean? A ukrainian flag is obvious, but what does the little bird in ukrainian colors stand for?

The dove is a symbol of peace. As for chess.com's flairs, they don't mean anything other than aesthetically. Flairs may also denote which premium membership the account has (Gold, Platinum or Diamond), but the others flairs are just for fun:
