In the 5th, 6th and 7th images, I saw there's a document next to the scoresheet. I'm not a expert in the Russian language, but is the document for when the player needs to seal their next move when the session is adjourned or something along those lines?

there was a special envelope for this. There is no envelope on the table. Such envelopes have no historical value to be kept in a chess museum.

in the match for the title of world champion 1981 Karpov Korchnoi (Merano, Italy) Played with Lardy's chess pieces. Pay attention to the knights in the photo. It's the Lardy Knights! Also at the highest level, Lardy's chess pieces were played at the 1974 Chess Olympiad France (Lardy 1974 Chess Set), and the 1982 Chess Olympiad Switzerland (Lardy 1982 Chess Set).

It's a Lardy alright. I can see the dark queen leaning in the very first pic. Sigh...I'm told we should "embrace the lean!" but I just can't get there. My OCD won't allow it.

The American Chess Company began advertising chess sets in American Chess Magazine in 1897. Some of the advertisements contained illustrations of the sets, showing their distinctively charming “sawtooth” mane knights. It is unknown whether the American Chess Company manufactured the sets itself, or whether it simply served as a distributor. However, some of the sets were used by some of the top players of the era in important competitions. Frank Marshall and Emanuel Lasker used an American Chess Company set in their 1907 World Chess Championship match. A set like this one, with different knights, was used during the 1904 Cambridge Springs International Chess Congress, which was won by Frank Marshall

American Chess Company chessmen in your post are not those mentioned in the excerpt from the WCHoF exhibition that referred to sets used in Cambridge Springs or Lasker-Marshall Championship.  It would this one that was on loan to them.

Certainly, the promotional photographs taken for the 1907 World Championship match appear to be similar to these, thus the informational quote in the WCHoF program.

The Championship Series Chess Set.

Regarding the Chess World Championship of 2007 in México City, some commemorative sets where made. 

There was nothing exceptional about this sets but the fact that they included two sets of knights, one was the DGT-like knight, and the other was an "eagle knight"
