pretty rare. Even if I do make a brilliant move, it doesn't label it.

3. ..g6?? (3. ..Qe7 best), and I would have been greedy as White snipped the N with check, then play Nf3 right after. So...where's the brilliancy?
@GMatchen Re your game, many players would indeed have gone for ...Qf2+, just because after dxc4 Nh3 it's not totally obvious how to continue the attack.
It seems harder to continue the attack after 1... Qf2+ 2.Kd3 dxc4+ 3.Kxc4 Be6+ 3.Kc3 and what next? or 1... Qf2+ 2.Kd3 Na6 3.Qe2 dxc4+ 4.Kxc4 Be6+ 5.Kc3 Bd4+ 6.Kc2 and I don't see how black avoids trading queens except by moving back to h4. I guess black has some compensation for the piece. However, After 1...dxc4 2.Nh3 cxb3 3.Bg5 Qxg4+ 4.fxg4 Bxg4+ 5.Ke1 Bxd1 6.Kxd1 bxa2 you are down a piece but you have 4 pawns for it and all three of whites remaining pawns are weak. That is the line I would probably go for but there is 2... h6 just to stop Bg5 altogether and claim comp for the piece but I doubt I would ever play that move in a million years.
I have only had one ever and after I looked at it the move really didn't seem that exceptional - I have made moves that I thought were a lot better than this.
It also doesn't like moves that give me a chance of winning an otherwise lost game in favour of ones that the engine regards as stronger but give me no chance of recovering.

Black looks completely losing but, like others have mentioned, there was only one, rather difficult, sequence of moves to follow. The computer engine doesn’t recognize black as winning even though it is clearly won with a passed pawn.

Threatening mate in one is certainly not what makes a brilliant move
Well in that position you either win the knight or get mate in 1 so in that case it is brilliant
there are certainly some instances in which a “brilliant move” is extremely logical but other cases where it is brilliant
I got my first brilliant !! move by the computer yesterday and I actually didn't consider it a !! move since it wasn't that hard to find.
I think it has to do with more of what happens after exf6. if g6, then Qh3 -> Qh6 -> mate is unstoppable, unless you saw how to stop it, which seems iffy
