You should definitely have taken the knight on move 16. Black would need a tremendous amount of positional compensation to sac a piece, and its just not there.

I'd definitely have taken the knight on turn 16. You're up a minor piece for a pawn after that, that is quite concrete. Also, you can advance to c4 immediately after the queen has taken the knightslayer pawn; everything is defended quite sufficiently, and you've got an open b-file to exploit. Any shenanigans in the centre, as far as I can see, merely get your knights closer to the action, and you've got open b and c files to assault the king with.
There is something to be said for making moves your opponent doesn't expect, however: It makes them nervous.

I haven't looked past about the 10th move, but here are my thoughts for before then:
5.Qe2 seems to make slightly more sense. It sounds like you'd benefit a lot from Jeremy Silman's "The Amateur's Mind". Your note to 6.d4 is typical of his student's in the book who tend to be often paranoid of threats which simply aren't there. He would never in a million years want to play 6.d5. 6.exd4 7.cxd4 d5 8.exd5 Nxd5 perhaps, but that looks OK for you. As you know you of course had the fork on move 8, but if that wasn't on Bxe6 looks good positionally. However you failed to cash in on your opportunity I think for several moves starting from move 9 to play dxe5 and after his pawns are doubled on the e-file you have a comfortable advantage.
I need some good analasys on this game. There is a lot of comentary in this game because I am explaining all my thoughts on possible moves. I know I messed up at the end with my attack even tho I got the win with the help of my opponent. So anyways here is the game.
