I don't understand how to set a one move per day game.

Where can I find a list of what these settings mean?
If I choose 1 day, is that one move per day, or 24 hours total?
What's 2|1 mean?

1 day means you must make 1 move per day (24 hrs). Likewise 3 day, 7 day etc. These are daily games. In live games 2/1 means 2 minutes each for the whole game plus 1 second increment per move (1 second is added to your time after each move you make). So for eg. 5/5 would be 5 minutes each for the whole game plus 5 seconds increment.
