How many strings should a guitar have?

Yep. An octave can be divided and tuned in any number of ways and is called microtonal music.

I'd need a couple dozen more fingers to play a guitar tuned to 53-TET. And thinner. Much, much thinner.

The positive side of having more strings is that you can generate a larger number of frequencies while playing the guitar, but the negative side is that it becomes harder to play as more strings are added.
