I mean I realize that we’re different species and different breeds of dogs are not, but in that case what was the defining point where the recently developed human and the ape could no longer mate?

Humans didn't evolve from any extant species of primate. Rather, humans and chimpanzees evolved from a common ancestor, but diverged millions of years ago. Human DNA and chimpanzee DNA are simply too different to be able to produce offspring.
