Seb, you should always write your moves down of each & every game. Every time a move is made by you or your opponent you write it down. As far as I know all rated games require it in the rules. I'm sure it's like that in every country. Besides, even if it's not a rule, you should still do it because that's how you get stronger at chess. It's those games you will use to get better, by studying your own games. Or, if you get a coach (or letting players on here see & comment on them) that's one of the tools that will be used to make you better.
If you find it distracting to write your moves down that will quickly go away the more you do it. You should start writing them down as practice, even alone playing a computer just so you get used to it.
